-1 tbsp AOI Matcha Powder
-2 egg whites
-125g caster sugar
-1/4 teaspoon cream of tartar
-Green food coloring (for more vibrant color if desired)
-Electric Whisk/Cake Mixer
-Piping/Icing Bag with a Star Tip
-Preheat your oven to 150C (300F) and line a baking tray with baking/parchment paper.
-Whisk the egg whites until foamy. Then add the cream of tartar and continue whisking until peaks begin to form. The peaks should stand tall when the whisk is removed.
-Slowly begin to add the sugar one spoonful at a time. Mix each spoonful well before adding the next.
-Once the sugar has dissolved, add the matcha into the mix and beat until combined. If you choose to add food coloring, do this now and mix again.
-Spoon this mixture into a piping bag and use the star tip to pipe out small stars onto the baking tray.
-Place tray into oven and bake for 20 minutes until dry. Turn off the oven, crack open the door and leave the meringues to cool.
-Remove tray from oven after meringues have had time to cool. Handle cookies carefully as the shells are very fragile.
-Store in an air tight container for up to a container.
