Matcha Marshmellow Smores

Summer has arrived and night time means campfires! With campfires come everyone's favorite treat: S'Mores! Here is a recipe to make delicious Matcha Marshmallows to use for your next S'Mores dessert!

 INGREDIENTS FOR CUPCAKES:
-1 Tablespoon AOI Matcha Powder
-1/4 teaspoon salt
-1/4 cup room temperature water
-2/3 cup corn syrup (without vanilla previously added)
-1/2 cup cold water
-1/2 oz. unflavored powdered gelatin
-Confectioner's sugar for dredging
-Graham Crackers
-Chocolate Bar

DIRECTIONS:
-In a large bowl, sprinkle the unflavored powdered gelatin into the cold water. Set aside and let seep for about 10 minutes.
-Using a medium saucepan, pour the 1/4 cup of room temperature water in and combine with the sugar and corn syrup. Bring this mixture to a boil and boil for about 1 minute.
-Pour this boiling mixture into the gelatin bowl and mix at high speed for 1 minutes.
-Next, add in the AOI Matcha Powder and salt. Beat this mixture for about 12 minutes until well mixed.
-Oil up your hands and a spatula and proceed to scrape the gelatin mixture into a pan measuring 11"x7" lined with plastic wrap that is sprayed with cooking spray first. Spread the mixture in the pan evenly.
-Once mixture is spread evenly, take another piece of sprayed wrap and place on top of the mixture, oil side down. This will help to smooth out the rough edges of the marshmallow before it solidifies.
-Allow the mixture to rest in the pan for about 3 hours.
-Once this time has ended, invert the pan and dredge the marshmallow. To dredge means to coat the marshmallow with a 80/20 mixture of confectioner's sugar and additional AOI Matcha Powder.
-Cut into square pieces with a knife.
-Proceed to make standard S'mores treat with your new Matcha Marshmallows!
-Be sure to store extra marshmallows in an air tight container.
