Matcha Buttercream Cupcakes Recipe
INGREDIENTS FOR CUPCAKES:
-2 Tablespoons AOI Matcha Powder
-1 Cup Milk
-2 Teaspoons Baking Powder
-1/8 Teaspoon Salt
-2 Large Eggs
-2 Large Egg Yolks
-3 Cups All-Uprpose Flour
-2 Cups Sugar
-1 Cup or 2 sticks of unsalted butter at room temperature
-24 cupcake papers.
-Preheat oven to 350 degrees.
-Beat the butter on high until it is soft for about 30 seconds. Add in the sugar after that on medium-high until the sugar is completely mixed in for about 3 minutes.
-Add in the egg/egg yolks one at a time.
-Between each egg, mix and beat for about 30 seconds.
-Whisk together flour, salt, and baking powder into a separate bowl. Once that is fully whisked, add to the batter mix and combine together.
-Mix in the AOI MAtcha Powder with the milk and whisk until fully dissolved.
-Add milk/matcha mixture to the batter and mix until fully combined.
-Scoop finished batter into cupcake papers.
-Bake for approximately 22-25 minutes.
INGREDIENTS FOR BUTTERCREAM FROSTING:
-1 stick butter
-3 cups powdered sugar
-2 tablespoons light cream
-1 tablespoon AOI Matcha Powder
-Mix the AOI Matcha Powder with the light cream in order to form a paste. Mix well.
-Beat the butter briefly and scrape the bowl clean once finished.
-Add the powdered sugar and the matcha paste together with the beated butter. Beat this mixture until smooth.
-Apply frosting to finished cupcakes!
