INGREDIENTS FOR CREPE BATTER
-2 tbsp AOI MATCHA POWDER
-1 cup flour
-1 cup milk
-1/2 lukewarm water
-3 large eggs
-3 tbsp sugar
-3 tbsp unsalted butter, melted
-1 pinch of salt
INGREDIENTS FOR CREAM FILLING
-2 tsp AOI MATCHA POWDER
-1/3 cup cornstarch
-2 cups milk
-1/2 heavy cream, whipped
-5 large egg yolks
-1/2 cup sugar
-2 tbsp RAW sugar
-1 tsp vanilla extract
-2 tbsp butter
-Caramel for drizzle
DIRECTIONS FOR CREPES:
-Whisk the AOI MATCHA POWDER into a bowl with the water. This works best with a traditional bamboo whisk. Leave the butter out at room temperature.
-In a large mixing bowl, beat the eggs together. Steadily mix in the flour and sugar. Once the flour and sugar are well mixed, add in the green tea mix, milk, and the rest of the ingredients. Mix until a smooth batter is formed. Cover the bowl and refrigerate for a few hours.
-Using a non stick pan or crepe pan, set to medium heat. Coat the bottom of the pan with either cooking oil or butter using a brush. This will help create a thin, even layer.
-Pour about 3 tablespoons of the batter into the pan and rotate around so the batter covers the entire pan in a thin layer. Cook until both sides are golden brown. Place on a parchment sheet once each crepe is done.
-Repeat to make about 15 to 20 crepes, a stack is required.
DIRECTIONS FOR FILLING:
-Using a small saucepan, boil the milk over a medium heat.
-Mix the sugar, cornstarch, and egg yolks in a separate bowl.
-Gradually pour in the hot milk into the bowl and whisk until all ingredients are well mixed. There should not be any clumps.
-Place this mixture into a sauce pan and bring to a boil over medium-low heat. YOU MUST WHISK NON-STOP.
-Once you notice the mixture becoming smooth and thick, remove the saucepan from the heat and into an ice water bath. This will help to rapidly cool down the mixture without burning it. Mix in the vanilla extract once cooled to room temperature.
-Place in the fridge to cool and then after some time, mix in 2 tsp of AOI MATCHA POWDER until smooth.
DIRECTIONS FOR ASSEMBLING FINAL STACK:
-Place one crepe down, and spread a thin layer of the filling. This will act as an adhesive. Repeat until you have a stack of desired height.
-Place in the fridge until ready to serve.
-Drizzle final crepe stack with a bit of caramel to give a super sweet taste!
