-1 1/2 tsp AOI MATCHA POWDER
-2 medium size eggs
-2 tbsp melted butter
-1 1/2 tbsp sugar
-1 1/4 gluten-free flour
-1 cup + 1 tbsp milk
-1/2 pure vanilla extract
-Place all of the ingredients into blender and blend until mixture is smooth.
-While blending, heat a small non-stick skillet over a low heat. Spray skillet with cooking spray.
-Pour enough batter to coat the bottom of the skillet, turning the pan to evenly cover. This step will not require a lot of batter, about 1/4 cup.
-Cook on one side for 1-2 minutes. Carefully flip over to the other side and cook again for another minute.
-Place your finished crepes on a plate and place wax paper between each crepe.
-Serve with any helping of strawberries or blueberries for best results.
